Pork Sausages (per pound)
Selection of handcrafted pork sausages made from local meats and the most delicate European spices. We use pork shoulder and lean cuts of pork belly exclusively. No fillers ever! We only use natural hog casings, and they often vary in diameter, which gives 3 to 4 sausages per pound. Our links are packed and wrapped in three layers for extra protection (saran wrap, vacuum seal, and freezer-grade butcher paper).
Beef Sausages (per pound)
Selection of handcrafted beef sausages made from local meats and the most delicate European spices. Made solely from premium beef cuts such as chuck and brisket. No fillers ever! We only use natural hog casings, and they often vary in diameter, which gives 3 to 4 sausages per pound. Our links are packed and wrapped in three layers for extra protection (saran wrap, vacuum seal, and freezer-grade butcher paper).
Ground Sausages (per pound)
Selection of ground sausages, no casings. Perfect for many dishes such as ravioli, soups, meatloaf, lasagna, pizza, and many others.
Premium Angus Burger
1/2lb Angus patty made from a perfect ratio of a chuck and brisket and as always we use locally raised beef.
Bacon (per pound)
Our bacon is made from the highest quality pork belly and pork loin. It takes ten days to create this beauty. Bacon is cut by hand and then packed in saran wrap, vacuum seal, and freezer grade butcher paper.
Sea Salt Hogg Belly Crisps (per half pound container)
Unlike pork rind (fried pig skin), salted Hogg belly crisps are made from firm parts of the pork belly. Hogg belly crisps are perfect for appetizers, charcuterie boards, or baked biscuits with their buttery flavor. Hogg belly crisps are like our Hoggbutter, pure labor of love. Making such delicious treats takes hours of constant stirring and temperature maintenance. While it takes hours to make them, we promise you will need minutes to eat them. Enjoy!
Butters and Spreads
Selection of sauces, jams, quince paste, steak butters, and Hoggbutter handcrafted from local ingredients.
Hocks and Shanks (per pound)
Applewood smoked ham hocks and shanks. Covered in Mediterranean sea salt for ten days and smoked to perfection. An excellent choice for beans, collard greens, or many other applications.
